Granola!

If you've ever been to one of our Brighton Retreats, you would have tried this granola: a feast of nuts, seeds, sweet things: a joy and a perfect start to the day.

Dionne and I have it as a topping on our smoothie every morning (here´s a recipe for that btw), but sometimes also by itself, with unsweetened almond milk, and perhaps some added fresh berries or apple bites. I tend to use a mix of whatever tempting seeds and nuts I have in the house, pistachios being my no 1 favourite.

To start I chop up all the nuts and seeds and then mix in a tablespoon each of coconut oil, maple syrup and honey, then put it in the oven for 15 minutes on 175 degrees. This is how I lay it out on the baking paper >

And this is how it looks when it's done. Smells amazing! Be sure to keep your kitchen door open to spread the goodness around. >

Measurements vary a bit for whatever I have available, but this is a rough guide for one batch in the oven >

GRANOLA RECIPE

2 cups sunflower seeds
1 cup roughly chopped pumpkin seeds
1 cup roughly chopped pistachio kernels
1 cup roughly chopped cashew nuts
1 tablespoon coconut oil
1 tablespoon honey
1 tablespoon maple syrup


Directions: mix and place in the oven on baking paper for 15 minutes on 175 degrees celsius.
